Freeze dried fruit is a fruit product processed by vacuum freeze drying technology. The production process is to place the cleaned fruit in a vacuum freeze dryer at - 40 ℃. After the frozen water in the fruit sublimates into gas, the freeze-dried fruit will be produced. The method will not destroy the original tissue structure of the fruit, and can better preserve the color, aroma, taste and shape of the fruit.

Compared with other food drying technologies, vacuum freeze-drying technology can largely retain the nutrients of raw materials. The content of carbohydrate, vitamin and protein per 100g of freeze-dried strawberry is higher than that of fresh strawberry with the same weight.

In addition, after the fruits are freeze-dried in vacuum, the protease is inactivated, which is more suitable for people with weak gastrointestinal function than fresh fruits. Although freeze-dried fruits have advantages in nutritional preservation, their intake must be controlled. Freeze dried fruits lose a lot of water, have a high sugar content and a low sense of satiety. Excessive consumption will increase the probability of suffering from diabetes, obesity and other diseases.

Each healthy adult should not eat more than 30 grams of freeze-dried fruit every day. Compared with freeze-dried fruits, fresh fruits are healthier. The Dietary Guidelines for Chinese Residents (2016 Edition) points out that healthy adults should eat 200-350g of fresh fruit every day
